Catharine Ross is the occupant of the Dorothy Foehr Huck Chair and Professor of Nutrition at The Pennsylvania State University. She earned her B.S. degree from the University of California at Davis and a Masters of Nutrition Sciences and Ph.D. in biochemistry and molecular and cell biology from Cornell University. After postdoctoral work at Columbia University, she joined the faculty of the Medical College of Pennsylvania, where she advanced before moving to Penn State in 1994. She has served as councilor and treasurer of the AmericanSociety for Nutrition (ASN) and is currently Editor in Chief of The Journal of Nutrition. She received the Mead Johnson Award and the Osborne and Mendel Award from the ASN, is a fellow of the American Association for the Advancement of Science, and was elected to membership in the National Academy of Sciences in 2003. She has served on various National Institutes of Health and Institute of Medicine committees, including the Food and Nutrition Board. Her research is focused on the regulation of vitamin A transport and function, especially in the immune system. Currently, she teaches graduate courses in molecular nutrition and an undergraduate writing intensive nutrition seminar. She served as an editor for the ninth and tenth editions of Modern Nutrition in Health and Disease. Benjamin Caballero is Professor of International Health at the Bloomberg School of Public Health, and Professor of Pediatrics at the School of Medicine, Johns Hopkins University. He received his M.D. degree from the University of Buenos Aires and his Ph.D. in neuroendocrine regulation from Massachusetts Institute of Technology. He has served on numerous national and international advisory panels, including the Food and Nutrition Board of the Institute of Medicine, the Dietary Guidelines for Americans Committee, the Food and Drug Administration Advisory Board, and several panels of the National Institutes of Health and the United States Department of Agriculture. His publications include the books Encyclopedia of Human Nutrition, The Nutrition Transition, Obesity in China, and Guide to Dietary Supplements, among others. He teaches the course Principles of Human Nutrition at the graduate program in nutrition at Johns Hopkins. He served as an editor for the tenth edition of Modern Nutrition in Health and Disease. Robert J. Cousins is the Boston Family Professor of Nutrition and Eminent Scholar at the University of Florida. He has a B.A. from the University of Vermont and a Ph.D. from the University of Connecticut and was a National Institutes of Health (NIH) Postdoctoral Fellow in Biochemistry at the University of Wisconsin. He has been President and Board Chair of the Federation of American Societies for Experimental Biology and President of the American Society for Nutrition (ASN). He has received numerous awards including the Mead Johnson Award, the Osborne and Mendel Award of the ASN, the NIH MERIT Award, the United States Department of Agriculture Secretary’s Honor Award, the American College of Nutrition Research Award, the Bristol-Myers Squibb/Mead Johnson Award for Distinguished Achievement in Biomedical (Nutrition) Research, the Dannon Institute Mentorship Award, and Distinguished Scientist Award from the International Society for Trace Element Research in Humans. He was elected to membership in the National Academy of Sciences in 2000. He is the editor of The Annual Review of Nutrition. His research is on the molecular and cell biology of zinc metabolism, nutrition, transport, and function. He teaches graduate courses in Mineral Nutrition and Analytical Techniques in Nutrition. He served as an editor for the tenth edition of Modern Nutrition in Health and Disease. Katherine L. Tucker is Professor of Nutritional Epidemiology at Northeastern University. She received herPh.D. from Cornell University and her B.Sc. from the University of Connecticut, both in nutritional science. She is a past Chair of the Nutritional Sciences Council and past board member of the American Society for Nutrition, and she served as an associate editor for The Journal of Nutrition for 8 years. Her research focuses on dietary intake, metabolism, and chronic disease (osteoporosis, diabetes, heart disease, and cognitive decline) in diverse populations. She is currently the director of the Center on Population Health and Health Disparities funded by the National Heart, Lung, and Blood Institute and is a member of the National Institutes of Health Kidney, Nutrition, Obesity and Diabetes (KNOD) study section. She teaches courses on nutrition and nutritional epidemiology.
